When the weather begins to turn my mind drifts to my favourite things, soup and being inside. Lucky for me, Wat Da Pho has inside tables and the amazing Vietnamese soup, pho. Time to be warm inside and out! Whenever we we visit Wat Da Pho, it always seems to be full with people lining up to order an tables already claim. Pho is the star of the menu, but they’re also well known in the area for their 3 for $10 rice paper roll specials.
They’re super quick with takeaway orders but pho is best enjoyed as ready and piping hot, so we chose to dine in to really experience our meal. I went for the classic beef, light strips served in a steaming soup, to be topped with spring onion and bean shoots, chilli and basil to your hearts content. The soup is so light and fresh, warming from the inside out. I’ve always been fascinated with watching the flush of the beef cook in the broth, changing from pink to light brown without losing any moisture or freshness. Wat Da Pho’s soup has a tendency to be a bit heavy with the fennel so you need to make sure you mix it through so it doesn’t overwhelm.
Wat Da Pho are well loved for this Vietnamese favourite dish is South Melbourne. They also offer more adventurous and traditional soups on the menu, I just always seem to find myself opting for the classic.
